There is no getting around the fact that rowan jelly is bitter. That is its nature, but you can add a touch of sweetness to it with rosehips, apples or cinnamon.
You need a jelly bag (you could also use a large cloth or pillowcase), a jelly pan (or heavy-based pot) and sterilised jars and lids.
Prick the rosehips and rowan berries with a fork and remove any stalks. Pop them into a heavy-based pot with the orange rind and pour in enough water to cover. Bring the water to the boil, reduce the heat, then simmer for about 1 hour.
