Lydie Bocquillon is the owner of a tiny, artisan cheese shop, The Cheese Neuk, in Kingussie and for many years has been a supporter of local producers like Inshriach Gin. At one time, Lydie was the chef-proprietor of The Auld Alliance in Kingussie where she would hold specialist cheese-and-wine evenings and serve this deliciously refreshing sorbet to cleanse the palate at the end. The sweetness
