This dough is easy to make and seems happiest when mixed by hand (rather than in the processor) and baked in the oven. Make sure your yogurt is at room temperature.


  • 170 g / 6 oz / cups strong / bread flour


In a medium mixing bowl, combine the flour with the salt and baking soda. Stir in the yogurt and half of the oil. Mix well using your hands.

Lightly flour a work surface. Turn the dough out onto it and knead, adding more flour if necessary, until it’s smooth and has stopped sticking to the surface (don’t add too much flour as it should be quite a soft dough). Use the remaining oil to li
