This is the master recipe for khinkali dough with egg (for the plain flour and water variety), with instructions about how to form and cook the dumplings. They’re not difficult to prepare, but may require a little practice to make them look as evenly and beautifully pleated as the Georgians do. Georgians use a wooden cutter like a large egg cup to cut out the dough, but you can use a glass or round cookie cutter.
