These rustic egg pancakes filled with pan-melted cheese illustrate the kind of food that was needed by – and available to – the Tushetians living at high altitudes in the mountains. Like all comfort food, they hit the spot if you’re heading out for a winter hike in the snow. The filling, of butter and cheese cooked together, is called khavitsi.
