Purslane (Portulaca oleracea) may seem like a weed to some but it’s eaten in many countries as a delicacy and is found both cultivated and wild. Purslane is highly nutritious: extremely rich in omega-3 fatty acids, it also contains many vitamins. The vineyards of Kakheti are full of purslane – or danduri as the Georgians call it – so it’s easy there to forage an armful and make this delicious salad. As with any plant growing low to the ground, purslane needs careful soaking in
