At Valodia’s Cottage in summer you eat dinner outdoors beside the river. They prepare a simple beef, onion and tomato stew that inspired this one, with clean flavours and aromatic herbs. In Georgia it would probably be cooked on top of the stove, but I find it easier to bake it in the oven. If you make this in summer, use fresh ripe tomatoes you’ve peeled and seeded.
