At Valodia’s Cottage in summer you eat dinner outdoors beside the river. They prepare a simple beef, onion and tomato stew that inspired this one, with clean flavours and aromatic herbs. In Georgia it would probably be cooked on top of the stove, but I find it easier to bake it in the oven. If you make this in summer, use fresh ripe tomatoes you’ve peeled and seeded. Otherwise use Italian peeled plum or cherry tomatoes. There’s just a hint of heat from the chilli in this stew, it’s not supp
