At Zgapari Restaurant I love the roast chicken in blackberry sauce. Here’s my own take on it for when blackberries are plentiful (frozen berries can also be used). It features duck breasts, though chicken breasts or pork fillet/tenderloin work well too. The meat is marinated for several hours or overnight before being cooked.

Using a sharp knife, score the duck skin in 1 cm / ½ in rows in a diamond pattern (don’t cut into the meat). Pat dry with a paper towel. Put the breasts into a small resealable plastic bag. Mix the marinad
