Pkhali are vegetables dressed with herbed walnut paste. They’re often made using leafy greens – from spinach and chard to beet greens and foraged leaves – but are also popular made from green beans. The consistency varies from firm and paté-like to looser. I cook green vegetables quickly to maintain their colours and flavours, but some Georgians prefer to cook them for longer.
