Sour sauce made from fresh plums, tkemali, underpins many dishes in Georgia. You can find bottled tkemali but it’s very easy to make. The classic version is made from small, green unripe plums prevalent in Georgia. Other plums can be used (as long as they’re not over-ripe) as their skins contain enough acidity to give the sauce its characteristic tang.
