Kharcho or kharsho is the name given to several dishes in western Georgia. One is a beef soup with tomato, rice and walnuts. This kharcho - usually made with chicken or beef - instead features a delicately spiced nut sauce with marigold petals. It’s one of my favourite Georgian meat recipes. The sauce looks like it contains lots of cream, but none is added: the creaminess comes from the ground walnuts. Use high-quality whole nuts and grind them just before using to stop
