This filled bread is a cornerstone of every Rachan meal. Lobiani’s most often served with a traditional filling of plain, mashed or puréed thin-skinned beans. Some Rachans add the fat from locally smoked hams to the beans for a distinctive smoky taste. You can get that extra layer of flavour using Speck, smoked prosciutto from northern Italy, as below. If you prefer your pie vegetarian, use plain beans or the herbed beans from the recipe. Follow the
