Senafich means “mustard” in Amharic, but it also refers to a spicy mustard condiment. You can make Senafich with your favorite prepared mustard, but I’d avoid using any smooth, bright-yellow mustard, as it won’t have a sufficiently strong mustard-seed flavor.

  • ¼ cup whole-grain or stone-ground mustard
  • 1 tablespoon water, plus more if desired

Method

Combine the mustard, water, oil, and garlic in a small food processor and process until smooth and somewhat creamy (there may still be bits of mustard seeds depending on the mustard you use). Season to taste with Mitmita if desired. If the mixture is too thick, add 1 to 2 teaspoons of addition
