Any variety of fava bean will yield tasty results in this recipe, but for the sake of authenticity, try to seek out small brown fava beans, also known as marrone or bell peas. You’ll have the best luck finding them in well-stocked Middle Eastern grocery stores, since they’re the same variety used to make ful mudammas, a similar fava bean dish prepared all over the Arab-speaking world.
