The first few times I tasted shiro in a restaurant, I was positive it was just puréed lentil stew. I went home and unleashed my immersion blender on a steaming pot of lentils, but something wasn’t quite right. When I finally learned about shiro, it was a true aha moment. To keep you and your immersion blender safe, here’s a basic shiro recipe. Remember to thin it out as much as you like.
