Ayib Be’gomen is a creamy and delicious way to enjoy greens. Eat this on its own or as an accompaniment to any of the spicy stews and sauces. I prefer this dish at room temperature, but it may also be served warm or cold.

Ingredients

  • 2 cups water, plus more as needed
  • pounds collard greens (2 bunche

Method

Put the water in a large saucepan and bring to a boil over high heat. Add the collard greens, cover, and decrease the heat to medium-high. Cook, stirring often, until the greens are tender, about 15 minutes. If the bottom of the pot becomes dry, add 2 to 3 additional tablespoons of water as needed to prevent scorching. Remove from the heat
