Think of this tomato salad as you would a Mexican pico de gallo. Although simple, its tart and vibrant flavors make a welcome addition to any beyaynetu.

Ingredients

  • 2 tomatoes, seeded and diced (2 cups)
  • cup minced onion

Method

Put the tomato, onion, and chile in a medium bowl. Add the vinaigrette and salt and toss to combine. Season to taste with pepper and additional salt if desired. Cover and refrigerate until just cold.
