This salad is a dream come true when the beets have been roasted until very soft and tender.

Ingredients

Method

Put the beets and basil in a medium bowl. Add the oil, lime juice, and salt and stir to combine. Season to taste with pepper and additional lime juice and salt if desired. Cover and refrigerate until cold.
