Don’t underestimate the delicious power of a simple potato salad. With its creamy, crunchy zing, it can dress up a platter of Ethiopian delights like nothing else. If you like more spice, add lots more chile.

Method

Put the potatoes, onion, bell pepper, and chiles in a medium bowl and gently stir to combine.

Put the oil, lime juice, and salt in a small bowl and stir to combine. Pour over the potato mixture and gently stir until evenly distributed. Season to taste with pepper and additional salt if desired. Cover and refrigerate until cold. Garnish with parsley.
