Here’s an easy, versatile tofu dish. Although it’s marinated in a berbere sauce, it’s surprisingly mild mannered.
Put the Awaze and water in an 8- or 9-inch baking pan and stir to combine. Add the tofu and pierce each slice in a few spots with the tines of a fork to help the marinade penetrate the tofu. Tilt the pan to cover each slice with the sauce, then refrigerate for 8 to 10 hours.
