Here’s a warm, spiced tea to drink while enjoying any of the snacks or sweets in this chapter. If you’re not a fan of black tea, chamomile makes a delicious alternative.

Ingredients

  • 3 cups water
  • 2 quarter-sized slices fresh ginger
  • 1 cinnamon

Method

Put the water in a medium saucepan and bring to a boil over high heat. Add the ginger, cinnamon stick, cloves, cardamom, and orange peel. Decrease the heat and simmer for 10 minutes.

Remove from the heat and add the tea bags. Steep for 3 minutes, strain, and pour into two mugs. Sweeten to taste with agave nectar.
