L’Avenue is one of the most innovative new restaurants in San Francisco. This is L’Avenue’s Chef Nancy Oakes’s version of harvest vegetable soup. It is loaded with flavor and texture, and it has a surprising flash of peppery heat on the palate.

Ingredients

  • 1 medium yellow onion, diced
  • 3 cloves garlic, chopped
  • 3 large leeks, wh

Method

  1. In a large skillet, sauté the onion, garlic, leeks, carrots, and celery in the olive oil until soft. Add all the squash, zucchini, and the peppers. Sauté until blended with the other ingredients. Season to taste and add the chicken stock. Simmer over medium heat until the squash is soft, about 10 minutes.
