After removing the bird to a warmed platter to rest, pour off the fat from the turkey roasting pan. Place over medium heat and add the stock and wine to the pan.
Bring to a boil and use a wooden spoon to scrape up baked-on bits. Continue boiling until the liquid has been reduced by half. Add salt and pepper to taste, and serve.
