The Ultimate Mashed Potatoes

While our son Toby was at boarding school, he would bring his friend Barrett home for Thanksgiving. For four years Barrett was at our holiday table mainly because of these wonderful, easy-to-make mashed potatoes. We usually had to double this recipe to accommodate Barrett’s appetite. These potatoes make a perfect vehicle for gravy.
