Celery root adds deep flavor complexity to the usual mashed potatoes. We thought the kids would riot when we served this, but they actually liked it.
If you have leftovers, this works well in the Mashed Potato Pancakes recipe.
Peel the celery root and cut into ¾-inch cubes. Place in a bowl with cold water to cover and reserve.
Put about 2 quarts of water into a medium-size pot. Peel the potatoes and cut them into ¾-inch cubes. As you finish each potato, drop the cubes into the pot. When you have finished, adjust the amount of water so that the potatoes are covered by 2 inche
