The pan juices from a smoked turkey are too potent to turn into a gravy. Instead, make this spicy and creamy sauce to serve alongside. You do not need to peel the apple before grating it.

Ingredients

  • Red apple, 1
  • Fresh chives, 1 bunch
  • Prepared cream-style horseradish, 16 ounces
  • Sour cream, ½ cup
  • Mayonnaise, ½ cup
  • Sugar, 1 teaspoon
  • freshly ground pepper

Method

Grate the apple flesh coarsely with a handheld grater, avoiding the core. Finely snip the fresh chives until you have about 1 tablespoon.

In a bowl, stir together the horseradish, sour cream, and mayonnaise. Add the grated apple, the snipped chives, and the sugar to the horseradish mixture and stir until combined. Season with pepper to taste.

Cover and refrigerate the sauce until ready to serve. (The sauce can be stored, tightly covered in the refrigerator, for up to 3 days.) Serve cold.
