This tart onion relish can be prepared up to 3 days in advance of serving. Let cool, cover tightly, and refrigerate, rewarming it over low heat for a few minutes just before serving.


  • Unsalted butter, ½ cup
  • Large red onions, 10, halved and thinly sliced
  • Salt and freshly ground


In a very large frying pan over medium heat, melt half of the butter.
