For tender, flaky biscuits, it is important to have a light touch. Biscuits, and quick breads in general, benefit from minimal stirring. Sharp cheddar cheese added to the batter makes a flavorful variation.
Position a rack in the middle of the oven, and preheat to 425°F. Line a baking sheet with parchment paper.
In a large bowl, stir together the flour, baking powder, salt, and Cheddar, if desired. Using a pastry blender or 2 knives, cut in the butter until the mixture forms coarse crumbs. Slowly pour in the milk and stir and toss with a fork just until the mixture is evenly moistened.
