When the sour cherries arrive for their summer season, Mademoiselle Ray bottles enough of this irresistible pickle to last all winter. (See menu use.) These cherries are an outstanding pickle accompaniment to almost all cold and many hot meals.

  • White wine vinegar (3 cups)
  • Brown sugar (1 lb.)

Method

Sterilize seven 1-pint Mason jars. Carefully pit cherries so as to damage them as little as possible. Then divide them equally between the seven Mason jars. In a 2-quart saucepan, bring rapidly to the boil the
