Chocolate pairs easily with many flavors, and the combination of coconut and chocolate used here is a natural. This nouvelle and trendy-looking cake evolved from the Chocolate Coconut Tropicana Pastries. When assembling the cake, take care not to get any chocolate mousse filling on the plastic liner above the ribbon sponge when leveling the mousse. The best way to accomplish this task is to use the flat side of a plastic scraper.
