This is a dessert I created especially for one of the graduation luncheons at the California Culinary Academy. Because the junior pastry class was responsible for the dessert preparation on these momentous occasions, they rightfully expected that when they were graduating seniors, the dessert selected by their class would be presented in a way that gave full credit to their special day.
