Ice cream cakes, like all cakes, are a faster and more efficient way of preparing a number of servings instead of making individual portions. They are also a bit unusual today and can remind us of ice cream sandwiches we enjoyed as children, which consisted of a rectangular slab of ice cream between two cake-like chocolate cookies, a treat that has been around since the early 1900s. Here, dark rum — both in the ice cream and in the mousseline sauce — give this dessert its Caribbean nametag.
