When humidity is high, making spun sugar is virtually impossible. If this is the case, increase the glucose or corn syrup a little and prepare the sugar just before it will be served or use a sugar substitute such as Isomalt. Under dry conditions, spun sugar can be prepared well in advance, provided it is placed in an airtight container and stored in a warm place with a dehumidifying agent.
