I originally created this sweet omelet for a special event where the host had requested a dessert that was unusual, light, and seasonal, and which did not contain chocolate. As this was in the late fall, when both star fruit and pomegranate are available, I decided to use them. If these fruits are not in season when you want to make this dessert, you can substitute any fruit that looks attractive sliced, such as strawberries, kiwis, figs, or papaya. None of these need to be sautéed or poach
