  • 7 ounces (200 g) walnut halves
  • Vegetable oil
  • 6 ounc

Method

  1. Very lightly toast the walnut halves and keep them warm.
  2. If you do not have a Silpat, lightly oil a marble slab or a sheet pan.
  3. Place the sugar, lemon juice, and water in a copper or heavy-bottomed saucepan. Cook over medium heat until the temperature reaches 240°F (115°C) on a sugar thermometer; brush down the sides of the pan with water a few times
