This was one of the sweets offered at the grand opening of Greystone, The Culinary Institute of America’s Napa Valley campus. The theme was “A Harvest of the Valley,” so with the melon, blackberries, and wine grapes grown right there, this seemed a natural. I got the idea for the presentation from the CIA’s Hyde Park master pastry chef, Joe McKenna.
