These small leaves are fragile and elegant. The thin curved stems give the leaves a realistic appearance but they also break off easily once the cookies are crisp, so handle them with care. Tuile maple leaves make a great accompaniment to soufflés, coupes and baked custards such as crème brûlée and crème caramel.
