Method

Make the template in Figure 13-46. The template, as shown, is the correct size required for this recipe. Trace the drawing, then cut the template out of cardboard that is 1/16 inch (2 mm) thick; cake boxes work fine. If you do not have Silpats, lightly grease the backs of clean, even sheet pans, coat with flour, then shake off as much flour as possible.
