I first saw these decorations being made at a demonstration at Maricuá Centro de Artes Culinarias in Mexico City, and I was quite taken with their elegance and originality. I certainly had my doubts about the use of a cleaning agent in a poaching liquid, but once you get past this oddity, you will see that after the soap does its job, subsequent steps not only whiten the garnish but also remove all traces of soap.
