A pamplona is a stuffed rolled roast that is grilled over a gentle fire. This specialty of the grill stalls and restaurants at Montevideo’s Mercado del Puerto is made with few ingredients, but the peppers and provolone fill the pork with flavor, and the resulting mosaic of color makes the dish a visual knockout, too.
