Think of these as “barbecue” burgers, redolent with the wood smoke scent of bacon and smoked cheese. In addition to the ingredients for the hamburgers on the opposite page, you’ll need:

Ingredients

  • 12 thin slices of bacon
  • 6 slices (¼ inch thick) smoked mozzarella or other smoked cheese

Method

In Step 2, wrap each meat patty with 2 slices of bacon. Cook the burgers as described in the previous main recipe. Put the burgers on buns and top with the cheese. The heat of the burgers will melt the cheese.
