This sauce is traditionally made with an edible green leaf called machea. In this country spinach gives a pretty close approximation. Palm oil has a distinctive orange color and sourish flavor. Look for it in African or Brazilian markets, but if you can’t find it, or have health concerns (palm oil is high in saturated fat), use olive oil instead. Add some paprika to give the olive oil a touch of reddish color.
