The tangy condiment encurtido turns up throughout Central America, where it’s used as an all-purpose accompaniment for grilled steaks and sausages, rice and bean dishes—and just about everything else. The chile of choice is the habañero pepper, a Mexican and Central American cousin of the Caribbean Scotch bonnet chile. The two are interchangeable.
