This simple relish is a traditional accompaniment to Moroccan barbecue. Serve it with any of the Moroccan lamb dishes in the lamb chapter or the Bani Marine Street Beef Kebabs.

Ingredients

  • ½ cup finely chopped shallots
  • ½ cup finely chopped flat-leaf parsley

Method

Combine the shallots, parsley, olive oil, and lemon juice in a mixing bowl and toss to mix. Add the salt and pepper and toss again. Taste for seasoning, adding more lemon juice, salt, and/or pepper as necessary. The relish tastes best served within 2 hours.
