Adobo refers to a large family of marinated meat dishes found throughout the Spanish-speaking world. In central Mexico, the term describes a fiery marinade made with chipotle chiles (smoked jalapeño peppers). Chipotles are sold both dried and canned (in tomato sauce). I prefer the canned ones for this recipe. Look for them in Mexican markets and specialty food shops.
