This recipe, Kullu Trout, showcases the delectable rainbow trout, which is found in abundance in the rivers of Himachal Pradesh. Whole fish are marinated in a mixture of mustard oil, chilli, lemon juice and rind before being baked. Serve them with basmati rice, and spoon the spicy hot sauce over the top of the fish.
Lay the fish on a flat surface and make three diagonal slits on each side. Put them in a shallow dish.
Mix the marinade ingredients together and pour over the fish. Gently rub in the marinade, working it well into the slits. Cover the dish with clear film (plastic wrap) and place in the refrigerator for 1 hour.
