  • About

Flummery was usually served in a soup plate with cream and sugar, but you may also serve it with a cranberry sauce. The sauce below is a variation of an 1848 recipe for cranberry pie.

Ingredients

  • 4 cups fresh cranberries
  • ¾ cup brown sugar
  • Juice of ½

Method

Combine all the ingredients in a saucepan and cook gently until the berries begin to burst (about 10 minutes). Serve cold as a sauce over the flummery. This sauce can also be served with roast duck, roast turkey, or venison.
