There is a variation of this called Turn-Under Pie. After the pie is baked, the top crust is removed whole, turned over like a shallow dish and set on a platter. The contents of the pie are then poured over the crust. This serving technique is very old among Anglo-Americans, and continued to be a prevalent habit in rural households where members of the family ate from a common dish placed in the middle of the table.
