Marcus Loofft’s Nieder-Sächsisches Koch Buch (Lower Saxony Cook Book) was sold by German bookshops in this country during the eighteenth century. Today it is a rich source of recipes for the food historian. Oblatgebackenes (things wafer baked) is Loofft’s quaint North German way of writing Oblaten. We are dealing of course with wafers, the edible ornaments that show up on the earliest Christmas trees in Germany.
