The subtitle to this recipe reveals its true character: Little Tea Cookies for the Christmas Tree. In other words, it is a good recipe for fancy tin cookie cutters, and the dough is ideal for making tree ornaments because the baked cookies are very lightweight.
Sift the flour and baking powder together twice. Then rub the butter, sugar, and flour mixture to a fine crumb using a sieve. Add the cinnamon and lemon zest. Beat the eggs to a froth. Make a hole in the center of the crumbs and add the eggs. Stir and work this up into a dough. Cover and ripen overnight in the refrigerator.
