Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ pound<

Method

Sift the flour and baking powder together twice. Then rub the butter, sugar, and flour mixture to a fine crumb using a sieve. Add the cinnamon and lemon zest. Beat the eggs to a froth. Make a hole in the center of the crumbs and add the eggs. Stir and work this up into a dough. Cover and ripen overnight in the refrigerator.
